Heat some garlic and oil in a wok. throw in a bunch of wide rice noodles, and half as much yellow noodles. turn up to massive high heat. throw a liiitle bit of water to soften the noodles, and just wait a few seconds. smell the factory essence drifting away. throw in some lap cheong, fish cakes, chicken/cockles/beef/prawns whatever, and some fish sauce (to taste, and this instead of soy sauce cuz it is sharper and saltier), maybe some belacan, sambal if you like a kick, and let that fry for a while. (maybe a minute) then throw in a handful of chives and heaps of raw asian beansprouts. let that go for like 10-15sec, then pour some or heaps (to taste) kecap manis/sweet(dark) soy sauce onto your spatula/turner, and let that fry for another 15s, then lower the fire, scoop everything to the side of the wok, then put a bit more oil into the wok, two eggs into the gap at the bottom, stir them constantly till theyre nice and saucy, then throw the noodles back over the top so you get an eggy gravy throughout the noodles. serve and enjoy.
also, making wontons right now. fun! can't wait to eat em. good stress release too.
